Coyote Cookies

Coyote pancake mix makes a great chocolate cookie—slightly grainy and nutty, they already contain the baking soda they need to help them spread. Use it as a base for any number of additions—chopped nuts, chocolate, dried fruit, coconut—anything goes.

  • 1/2 cup butter, at room temperature
  • 1 cup packed brown sugar
  • 1/4 cup sugar
  • 1 large egg
  • 1 tsp vanilla
  • 2 cups Coyote Flaxseed Pancake Mix
  • 1/4 tsp salt
  • 1 cup chocolate chips

How to Make It

Preheat the oven to 350˚F.

In a large bowl, beat the butter, sugars, egg and vanilla for a few minutes, until pale and light. Add the pancake mix and salt and stir until the dough is almost combined; add the chocolate chips and stir just until blended.  

Drop large spoonfuls onto a parchment-lined baking sheet and bake for 12-14 minutes, until golden around the edges but still soft in the middle. Makes about 1 1/2 dozen cookies.
