Preheat oven to 450°F.
**Roll out your pizza dough to about ¼” to ½” with some flour to your desired shape. **
Place the pizza skin in the oven and cook for 8-12 minutes. Cook until golden brown and crispy. Remove from the oven and let cool.
In a small bowl combine the mascarpone with the white sugar, 2 tsp lime juice and lime zest. Set aside.
In a large sauté pan heat butter and brown sugar. Cook on medium heat until brown sugar melts and starts to caramelize.
Add the pineapple and cook until pineapple starts to caramelize. Carefully toss the pineapple with the brown sugar caramel and then deglaze with 1 tbsp lime juice. Remove from the heat and let cool.
To build the dessert pizza, spread the mascarpone in a thin layer on the cooked shell, leaving a ½” space on the edge for the crust.
Place the pineapple on top of the mascarpone, followed by a drizzle of the caramel sauce and finish with the macadamia nuts and mint leaves.
