Preheat oven to 400°F
2.
Cut the tops off the peppers and remove the seeds and as much as the membrane as possible without breaking the peppers. Place them standing up in a baking dish.

Heat 2 tbsp olive oil in a medium sauté pan over medium high heat.

Cook onions until translucent approx. 3-5 minutes. Add paprika and garlic and cook for another 30 seconds.

In the same pan cook burgers, breaking them up with a wooden spoon into mince.

Strain the meat from the fat and add back to pan with tomatoes and chicken stock.
7.
Bring to a boil and reduced until almost no stock is left.
8.
Stir in the rice to absorb the last of the liquid.
9.
Stuff the pepper with meat mixture until a little overflowing.
10.
Top with mozzarella cheese. Cover with foil and bake for 25 minutes.
11.
Uncover and broil on high for another 5 minutes until cheese is browned.
12.
Served garnished with parsley.
