Preheat oven to 400°F.
Heat a large cast iron pan over medium high heat.
Add and cook bacon until it is brown and crispy. Remove for pan and set aside two pieces of bacon for garnish. Pour out half of the bacon grease.
Cook onions, peppers, and garlic in bacon grease until onions are soft and translucent, about 5 minutes.
Stir in paprika, chili powder, salt and pepper, and cook for 2 minutes. Then add in BBQ sauce, vinegar, Dijon, and brown sugar. Stir until well combined.
Stir in the beans and half of the bacon and bring to a boil, then remove from heat.
Place skillet in the oven for 30 minutes until the beans are bubbling and syrupy.
Remove and let cool slightly before serving.
Garnish with broken bacon pieces and chopped parsley.
